With the right rice anything is possible.

  • 500 g Original Ellebi Sushi Rice

  • 600 ml Water

  • 150 ml Rice vinegar
    (or apple cider vinegar as an alternative)

  • 60 g Sugar

  • 5 g Salt

To begin, wash the rice. Place it in a bowl and rinse it. When the water has become clear, drain it, refill the bowl with water and let the rice soak for 15 minutes. Next, drain the rice and let it rest another 10 minutes. Transfer the rice to a pot with water, cover with a lid (which should not be removed for the entire cooking time) and, over high heat, bring to a boil. Cook the rice for 12-13 minutes over medium heat. After the necessary time has elapsed, turn off the heat and, again without removing the lid, let the rice rest for another 10 minutes so that it can complete cooking by steaming. Meanwhile, prepare the mixture to be added to the rice by pouring the rice vinegar, sugar and salt into a saucepan, cooking over low heat until the sugar is completely dissolved. You can now finally remove the lid and transfer the rice to a bowl (not steel). Now begin to slowly stir the rice with an exclusively wooden spoon and meanwhile pour in the vinegar, sugar, and salt mixture. While mixing rice and vinegar, fan it with a fan so that the rice dries and cools.
