If you want to recharge with vitamins, vegetable soup is just for you! Good, warm, tasty and detox effect. Rich in fiber and antioxidants, minestrone also helps drain excess fluids.

  • 360 gRibe Ellebi rice

  • 1 stalk Celery

  • 1 Carrot

  • ½ Onion

  • 1 clove of garlic

  • 100g Bacon

  • 2 Potatoes

  • 1 Tomato

  • 200 g Borlotti beans

  • 1 tin of peas

  • 2 Courgettes

  • ¼ Cabbage

  • Extra virgin olive oil q.b.

  • Salt to taste.

  • Pepper to taste.

Dice the bacon and fry it in 2 tablespoons of oil along with the chopped celery, onion, garlic and carrot. Add, once the sauté is ready, the peeled and diced tomato, diced potatoes, and zucchini cut into wedges. Add the dried beans, which you have previously soaked for 2 hours, to the mixture. Pour in 2 liters of salted boiling water and cook for 2 hours. Remember to add ½ hour before the end, the chopped cabbage leaves. Put in the rice and peas and cook for about 15 minutes. Season with salt, pepper, and 1 tablespoon of raw oil.
